The origin story of "Maypop" coffee is rooted in a unique culturing process that creates a vibrant and exotic flavour profile. Developed on Finca Milan in Colombia's Risaralda region, this method incorporates Castillo and Caturra coffee varieties fermented with passionfruit (maracuya and curuba) and specialised microorganisms. The fermentation occurs over an extended period (up to 144 hours) in a low-oxygen environment, enhancing the coffee's natural fruity and floral characteristics. Following fermentation, the beans undergo solar drying, accentuating flavours like lychee, floral notes, and a rich passionfruit finish.

Finca Milan's innovation in fermentation stems from a blend of tradition and scientific exploration, where farmer Julio Andres combines local ingredients and selected bacteria to create a flavour-forward, layered sensory experience. The result is a coffee that captures the bright, aromatic essence of tropical Colombia—perfect for a blend called "Maypop" which we at Sapidus Roast renamed as Passionpop.
