At Finca La Riviera, Julio has perfected various fermentation methods, including washed, honey, natural, cold press, culturing, and nitrogen fermentations. The nitrogen process involves carefully controlled embryonic stress on ripe cherries, followed by fermentation in a nitrogen-infused bioreactor with starter cultures. This meticulous process is monitored for optimal results, producing a coffee that reflects the farm's commitment to quality and innovation.

The farm's Caturra variety, a natural mutation of Bourbon, adds historical significance to its offerings. Discovered in Brazil in the early 20th century, Caturra has been a benchmark in Central American coffee production for decades.
